Rajasthani Corn Flour Rab Recipe: A Traditional Dish for Winter Breakfast

The traditional Rajasthani dish, corn flour rab, is very popular as a winter breakfast. This local snack is made from corn flour and yogurt (chaach), and the addition of ghee and spices significantly enhances its flavor. Preparing this dish at home does not require much effort, and it can be served hot.

If you want to eat something tasty but easy on the stomach in the morning, you can try the traditional Rajasthani dish—corn flour rab. In some regions of North India, it is also known as maize mahari. It is made from corn flour and chaach. In the rural areas of Rajasthan, it is especially enjoyed during winter. It is quite simple to prepare, and all the necessary ingredients are easy to find at home.

To prepare rab, take corn flour into a pot and gradually mix in a little chaach, stirring thoroughly so that no lumps form in the mixture. Then, add the remaining chaach and one or two bowls of water, mixing the mixture well.

After this, place the pot on medium heat and stir constantly so that the mixture does not burn to the bottom and lumps do not form. When the mixture starts to boil, reduce the heat. Then, cook the dish for about 15–20 minutes, stirring occasionally. When the solution is completely cooked and has become slightly thicker, add salt to taste and roasted cumin powder.

To give rab an aroma, heat ghee in a small pan. Add whole cumin, asafoetida, and the chosen red or green chili. As soon as the cumin starts sizzling, pour this flavored fat into the rab and mix thoroughly. Finally, sprinkle with finely chopped fresh coriander on top. The ready traditional Rajasthani rab is ready to be served hot for breakfast.

Sweet Gur Dos Recipe: An Alternative to Halwa and Kheer for the Festival

If you want to prepare something special and sweet for the Durga festival, you can try the famous Vellai Dosa recipe from Karnataka. This sweet dosa is made from gur, wheat flour, rice flour, and coconut, and it has a very pleasant taste while being quick to prepare.

The Durga festival is celebrated across the country on a grand scale. On this day, people perform religious rituals and prepare various dishes with their families. Usually, during festivals, halwa, kheer, or laddu are prepared as dessert; however, if you wish to try something new, you can make the traditional sweet dosa from Karnataka, also known as Vellai Dosa.

To prepare this dessert, gur, rice flour, wheat flour, and coconut are used. The aroma and taste are further enhanced by cardamom powder. Dried fruits such as cashew nuts, almonds, and raisins can also be added. Next, a simple recipe for making sweet dosa and a list of necessary ingredients are presented.

First, heat the gur in a pan along with a small amount of water. It is important to allow the gur to dissolve completely to form a syrup. After that, turn off the heat and let the syrup cool slightly, but it should not cool completely.

Then, add the wheat flour, rice flour, grated coconut, and cardamom powder to the syrup, mixing the components thoroughly. If you prefer a crispier texture for the dosa, you can mix in chopped cashew nuts, almonds, or raisins.

After this, prepare the batter by gradually adding water as needed. You must ensure that the consistency of the batter is neither too thick nor too thin. Then, heat the pan and grease it with a small amount of ghee.

Place one tablespoon of batter onto the pan and spread it into a dosa shape. Add a little ghee on top and let it cook over low or medium heat. When the dosa is cooked on one side, flip it and fry the other side until fully cooked. After the dosa is browned on both sides, remove it from the pan. The remaining batter is prepared similarly to make the rest of the dosas. The hot sweet dosa is served to the family to enjoy the festival.
