The Food Safety and Standards Authority of India (FSSAI) has issued a corrective notice to the Radisson Blu Hotel in New Delhi concerning several alleged violations related to food safety and hygiene. The hotel is operated by M/s AB Hotels Limited.
During the inspection, various deficiencies were found in the premises, equipment, cleaning, food procurement, and maintenance. The authority has requested the operator to make immediate rectifications and submit a detailed action report with necessary documents and photographs.
According to the issued notice, rusty machinery and leakage in the freezer were found in the hotel, along with inadequate cold storage arrangements. Additionally, deficiencies were noted in temperature monitoring, ventilation, flooring, and lighting.
In terms of sanitation and cleanliness, shortcomings such as stagnant water, drainage issues, and improper management of food waste were observed. Pest control was also weak, and cockroaches and flies were seen in the inspected areas.
Questions were also raised regarding the food procurement and receiving process; this included moldy and spoiled fruits and vegetables. Deficiencies were also found in the records of approved vendors and the system for identifying food sources.
The Total Polar Compounds (TPC) value in the oils used in the hotel's NCY kitchen was found to be 31 and 24.4, respectively, and according to the notice, the essential suitability testing of the oil had not been conducted.
Raw and cooked food, vegetarian and non-vegetarian items, and allergenic and non-allergenic foods were not properly segregated. Shortcomings were also found in separating food from non-food items. Some employees were observed working without gloves and hairnets, wearing jewelry, and having long nails.
Furthermore, the FSSAI license was not displayed at the prominent location, and deficiencies were recorded in the scope of the food business and the terms of the license. The operator must submit proof of corrections and photographs. The notice warns that failure to comply with the instructions may lead to further regulatory action, including the suspension of the FSSAI license.
