Jalebi is a well-known sweet that many have tried, but the taste of the famous, large, and crispy Jalebi from Jodhpur has a distinct character. This pastry, fried in ghee and soaked in sugar syrup, possesses an exceptional flavor. This article presents a simple guide on how to prepare this sweet.
A sweet tooth, upon hearing the word 'Jalebi,' feels an irresistible urge to try the hot, sweet, and crispy version. Although many types of Jalebi are available for purchase, the taste characteristic of Jodhpur in the state of Rajasthan is considered unique. The local shop Motudji Jalebibala, which is reported to be about 125 years old, is a place where four generations have been making this dessert. Jalebis from this place are famous for their large size, crispy texture, and rich syrup flavor.
The traditional preparation method, which involves frying in ghee, gives this dessert an even more unique taste. If you wish to enjoy the same taste, you do not need to travel to Jodhpur; we will provide a simple recipe for making Jodhpur-style crispy Jalebi right at your home.
To begin, soak the gram flour (urad dal) overnight in water. The next day, drain the water, and then grind the flour into fine crumbs. Next, mix the flour, ground gram flour, and sour yogurt in a large bowl. By adding a little warm water, knead a thick and smooth mixture, ensuring there are no lumps in the dough.
After kneading, cover the dough and leave it in a warm place for 12–15 hours for the yeast to rise. Before starting to make the Jalebi, whip the dough thoroughly and add water with saffron.
To make the syrup, heat sugar and water in a separate pot over medium heat. After the sugar is completely dissolved in the syrup, add ground cardamom and saffron. Simmer the syrup until it reaches a light viscosity. Finally, add a few drops of lemon juice and turn off the stove. Leave the syrup warm so that the Jalebis can be easily dipped into it.
Fill the dough into a special Jalebi mold or a pouch. Heat ghee in a wide and shallow pan. Squeezing out the dough, form round pieces, and in the Jodhpur style, the Jalebis are made large. Fry the Jalebis over low or medium heat until golden and crispy on both sides.
Immediately after frying, dip the Jalebis into the warm syrup. Leave them there for about 30–40 seconds, then remove them. It is important not to keep the Jalebis in the syrup for too long, otherwise, they may lose their crispy texture. The finished Jalebis are served hot. In Jodhpur, such crispy Jalebi is often eaten with warm milk, and you can enjoy this taste at home by serving it with milk.
