During the cold season, fresh green beans and spinach are easily found in markets. From these two vegetables, many diverse and appetizing dishes can be prepared. If you are tired of dishes like Matar Paneer or Palak Paneer, you should try Palak Matar Sabzi. The sweetness of green beans combined with a thick spinach sauce gives this dish a special flavor. Cilantro, ginger, garlic, and various spices are used to enhance the taste.
Preparing this dish at home is simple, and it can be served with flatbreads (roti), paratha, or rice. Below is a guide to the ingredients and the simple way to prepare Palak Matar Sabzi.
How to make Palak Matar Sabzi
First, roast the spices: heat oil in a pot, add cumin seeds, black pepper, and cloves, and roast them for a few seconds. Then add finely chopped onion and cook until golden brown.
After the onion browns, add the dry spices: red chili powder, turmeric, coriander powder, garam masala, and salt to taste. All spices are thoroughly mixed.
Next, add the green beans and chopped French beans to the pot, mix well, and let them simmer slightly so that the vegetables become tender.
Prepare the spinach paste: blend the washed spinach, cilantro, green pepper, ginger, garlic, a little cumin, salt, and yogurt in a blender. All ingredients are ground into a fine puree.
The prepared spinach puree is then added to the pot and thoroughly mixed with the beans and French beans. The dish is simmered over medium heat.
The sauce needs to be cooked until the raw taste disappears and the beans and French beans become completely soft. If the sauce seems too thick, a little water can be added as needed.
When the dish is fully cooked, turn off the heat. The ready Palak Matar Sabzi is served hot with roti, paratha, or rice.
