Hyderabad Dalcha Recipe with Three Types of Beans and Zucchini, Served with Cumin Rice

If you are tired of usual legume dishes and want to try something spicier and tastier, you can prepare Hyderabad Dalcha. This dish, made from three types of beans, zucchini, and tamarind, pairs very well with rice or cumin rice. Below is a simple way to prepare this homemade dish.

Dal is an integral part of Indian cuisine and is often cooked daily. However, if you wish to diversify your diet, you can make Hyderabad Dalcha. This famous dish from Hyderabad is traditionally served with rice or cumin rice. It uses three types of legumes, zucchini, tomatoes, onions, and various spices.

The water from the tamarind gives the dish a slight sourness, which makes its taste even more special. Next, we will tell you how to prepare spicy and tangy Hyderabad Dalcha and what ingredients you will need for it.

For preparation, you will need: 300–400 grams of zucchini (peeled and cut into large pieces), ¼ cup of oil, 1 teaspoon of cumin seeds, 3–4 cloves, ½ teaspoon of black pepper, 2 green cardamom pods, 2 dried red chilies, 1 piece of cinnamon, 1 small onion (finely chopped), 1 tablespoon of ginger and garlic paste, 1 medium tomato (chopped), 1 teaspoon of coriander powder, 1 teaspoon of red chili powder, ½ teaspoon of turmeric, ½ teaspoon of garam masala, salt to taste, ¼ cup of tamarind water, 2–3 green chilies (cut lengthwise), finely chopped green peas, and water as needed.

To begin, thoroughly wash the lentils, dal, and moong dal, then soak them in water for 30 minutes. After that, place the beans in a pressure cooker along with the large-cut onion, tomato, green peas, mint, turmeric, dry methi, salt, and about 3 cups of water. Close the pressure cooker lid and cook over medium heat until two whistles are heard. Then allow the pressure to release naturally.

Now peel the zucchini and cut it into quite large pieces; it is important that the pieces are not too small, as they will cook along with the dal.

Heat the oil in a pot. Add the cumin seeds and let them sizzle. Then add the cloves, black pepper, green cardamom, dried red chilies, and cinnamon. After that, add the finely chopped onion and fry until light golden brown. Add the ginger and garlic paste and cook for about 30–60 seconds to remove the raw smell.

Next, add the chopped tomato to the pot, along with the coriander powder, red chili powder, turmeric, garam masala, and salt to taste. Sauté the spices until the tomato softens. Then add the zucchini pieces and fry for 1–2 minutes. Pour in one cup of water, cover with a lid, and cook over medium heat for 6–7 minutes. Do not let the zucchini overcook, as it will cook with the dal.

When the zucchini is about half-cooked, add the prepared dal. Then stir in the tamarind water, sliced green chilies, and green peas. Cover the pot and cook over low or medium heat for about 10 minutes. This will allow the zucchini to become soft, and the flavor of the dal and spices to fully blend.

After the dalcha is ready, turn off the heat. Serve it hot with rice or cumin rice. This tangy and spicy dalcha will multiply the flavor of your meal.

How to make Kanda Chokha?

To prepare, you will need 500 grams of large arbi (kanda), 1-2 tablespoons of sesame oil, 4-5 cloves of garlic, 2-3 green chilies, salt to taste, 1-2 teaspoons of lemon juice or sesame paste, 2 finely chopped onions (optional), and 2 tablespoons of finely chopped coriander.

It is served with roti, naan, paratha, or rice. Next is a detailed description of the ingredients and the cooking process.

For the Dal:

1/2 cup chana dal

1/2 cup tur dal

1/2 teaspoon turmeric powder

1/2 teaspoon salt

1 cup water

For the Gravy:

2 tablespoons oil

1 teaspoon cumin

1/4 teaspoon salt

1 teaspoon coriander powder

1/2 cup water from the dal

1/2 teaspoon dried methi

2 tablespoons oil

1/2 teaspoon cumin

1 teaspoon finely chopped garlic

2 whole dried red chilies

1/2 teaspoon finely chopped ginger

1/2 teaspoon red chili powder

2 tablespoons finely chopped green cilantro

To begin, the chana dal and tur dal should be thoroughly washed and soaked separately for about two hours. After that, both dals are placed in a pressure cooker together with turmeric, salt, and water, and cooked until they reach 3-4 whistles, until the dal is completely soft.

Next, heat the oil in a pot and fry the cumin. Then add the ginger-garlic paste and fry for a few seconds. After that, add the finely chopped onion and cook until light golden brown.

When the onion is browned, add the tomatoes, salt, coriander powder, green chili, and garam masala. Mix all the ingredients well and simmer until the tomatoes become soft and the spices are fully cooked. Then add the dried methi and mix.

After this, pour in half a cup of water from the dal and the cooked lentils. Add a little water as needed and cook the dal on low heat for 5-7 minutes so that the spice aromas penetrate well into the dal.

Now proceed to prepare the tadka for the dal. For this, heat the oil in a small pan. Add cumin, finely chopped garlic, ginger, and whole dried red chilies to it, frying until golden brown. Finally, add red chili powder and green cilantro.

Recipe for Turaai Bhaji in Maharashtrian Style with Green Chili and Garlic

If you are tired of ordinary turaai dishes, try preparing it in the Maharashtrian style. This turaai bhaji, prepared using green chili, garlic, and roasted peanuts, has a unique taste. It can be served with roti, chapati, paratha, or dal-chawal.

The addition of peanuts and garlic radically changes the taste of turaai. Although many people may not like the taste of burdock, pumpkin, and turaai, especially considering that turaai always turns out bland and simple, the Maharashtrian cooking method might surprise you.

In Maharashtra, turaai is cooked in a special way called Dodkachi Bhaji. To prepare Dodkachi Bhaji, turaai, green chili, garlic, and roasted peanuts are used. These ingredients give even a simple vegetable an excellent taste and a light crunchy texture. Notably, this dish does not require a large amount of spices. It is served with roti, chapati, paratha, or dal-chawal.

To begin, thoroughly wash the turaai and remove the skin. Then, cut it into small pieces and set aside. The green chili and garlic also need to be cut into large pieces. The roasted peanuts should be crushed into coarse crumbs; it is important not to turn them into a fine powder, as the coarse crumbs retain crunch and flavor in the dish.

Heat oil in a pan, then add rai seeds and jeera, allowing them to sizzle. Next, add the chopped green chili and garlic and fry on medium heat until the strong aroma of garlic appears. After that, add the chopped turaai to the pan and mix well with the green chili and garlic. Cook the turaai for several minutes on medium heat. Since turaai contains a lot of moisture, it releases it during cooking, so no extra water needs to be added initially.

Cover the pan and let the turaai cook for some time, stirring occasionally so that the vegetables do not stick to the bottom. When the turaai becomes soft and most of the liquid evaporates, add the crushed roasted peanuts. Mix the peanuts thoroughly with the turaai and cook for another 2-3 minutes. During this time, the peanut flavor completely permeates the turaai, improving the texture of the dish. Garnish the finished vegetable with finely chopped green onion and turn off the gas.

The finished Maharashtrian turaai is prepared as a delicious snack, which is recommended to be served hot with roti, chapati, or paratha. It also pairs excellently with dal-chawal. If you are tired of eating the same type of turaai, you can try this Maharashtrian recipe.
