Spicy sweet corn lagana recipe without eggs

A recipe for spicy sweet corn lagana is presented. To prepare it, you need to use 1 cup of granular flour, a quarter cup of Taystee wheat/semolina groats, a quarter cup of cornmeal, 2 tablespoons of cake flour, 1 teaspoon of baking powder, one medium onion, 3 eggs, 5 green chilies, 2 teaspoons of crushed dried red chili flakes, 1 teaspoon of salt, half a cup of oil, one can of Creamstyle corn, and 1 cup of frozen corn, as well as half a cup of milk and one bunch of finely chopped cilantro (dhania).

To begin, blend the eggs, green chilies, milk, and onion in a blender or liquidizer, then pour this mixture into a bowl. Add the Creamstyle corn, whole frozen corn, and chili flakes, and mix thoroughly.

In a separate bowl, sift the flours, baking powder, cornmeal, Taystee wheat groats, and salt. Gently incorporate these dry ingredients into the liquid mixture along with the oil. Then add the chopped cilantro and mix well again.

Pour the mixture into a greased baking pan, sprinkle with sesame or poppy seeds on top, and bake at 180 degrees Celsius for about 30 minutes or until golden brown. The finished lagana should be cut into squares and served with your chosen chutney.

Eggless Option

To get an eggless version, replace each egg with a quarter cup of yogurt.

Various variations are also available: you can add 6 bunches of finely chopped mint (methi) or 2 cups of finely chopped watercress. Alternatively, you can use 2 cups of chopped spinach, 1 cup of grated cheddar cheese, or 1 cup of diced feta.
