If you crave something crunchy and tasty with tea in the evening, people often buy potato chips or wheat flour snacks from stores. However, instead of these unhealthy and unhygienic snacks, making super healthy and crispy ragi chips at home will provide not only flavor but also numerous health benefits.
Ragi, also known as maddu or nachni, is considered an excellent source of calcium, fiber, and iron, which is especially beneficial for children's development, weight loss, and people with diabetes. Sometimes there are issues with ragi flour: due to the lack of gluten, it can crumble when rolled out or turn out hard instead of crispy. To make your chips as thin, crispy, and aromatic as store-bought ones, you need to prepare the dough by cooking the flour in hot water and adding a little rice flour or semolina.
How to Make Ragi Chips
The following ingredients are needed for preparation:
Dough Ingredients:
- 1 cup of ragi flour (nachni flour)
- 2 tablespoons of rice flour or fine semolina (for extra crispiness)
- 1 cup of water (for boiling)
- 1 teaspoon of white cumin, 1/2 teaspoon of fennel (crushed by hand)
- 1/2 teaspoon of curry powder, 1/4 teaspoon of turmeric
- 1 tablespoon of oil or ghee (for greasing)
- Salt to taste
Spicy Magic Seasoning (for sprinkling on top):
- 1/2 teaspoon of chaat masala
- 1/2 teaspoon of roasted cumin
- 1/4 teaspoon of amchur powder or peri-peri
- 1/4 teaspoon of black salt
To begin, bring 1 cup of water to a boil in a saucepan. Add salt, 1 teaspoon of oil, fennel, cumin, curry powder, and turmeric to this water. When the water starts boiling, reduce the heat and gradually stir in the ragi flour and rice flour, mixing thoroughly. Then turn off the heat and cover the saucepan with a lid for 5 minutes. The steam helps the ragi flour become soft and provides good binding ability to the dough, so it doesn't fall apart when rolling.
After five minutes, transfer the dough to a wide bowl. When the dough becomes slightly warm (so that it can be touched by hand), knead it for 3-4 minutes, lightly greasing your hands with oil until you get a smooth and soft dough.
Form small balls from the dough. These balls are either placed between two parchment sheets or coated with dry rice flour to be rolled out very thinly. The thinner the sheet is rolled, the crispier the chips will be.
The rolled sheet must be pricked several times with a fork so that the chips do not puff up like donuts while frying. Then, cut it into triangular or rectangular pieces using a knife or cookie cutter.
Frying or Baking Methods
For frying: heat oil in a deep pan over medium heat. Fry the cut chips over medium or low heat for 3-4 minutes until they are crispy on both sides.
For baking: bake the chips in a preheated air fryer or oven at 180°C for 10-12 minutes.
Place the hot chips in a bowl and immediately sprinkle with the prepared chaat masala and peri-peri mixture, then mix. The chips need to cool completely. The finished crispy and spicy chips can be stored in an airtight container for up to 1 month.
