Soft, tender flatbreads filled with potato are a favorite breakfast dish, but making such parathas often proves difficult. Common problems include the bread tearing while rolling, the filling leaking out, or the finished paratha turning hard and dry.
According to renowned chef Ranveer Brar, the main reasons for paratha tearing are excessive moisture in the boiled potatoes and incorrect dough kneading. He asserts that by following the correct sequence for preparing the potatoes and the dough texture, the paratha will turn out fluffy, like a ball, and incredibly soft.
Ingredients
For the dough, you will need two cups of wheat flour, half a teaspoon of salt, one teaspoon of vegetable oil or ghee, and warm water as needed. For the potato filling, you need four medium boiled potatoes (cooled), two green peppers, one teaspoon of grated ginger, half a teaspoon of ground cumin, half a teaspoon of amchur or pomegranate powder, half a teaspoon of garam masala, half a teaspoon of dried mint, half a teaspoon of crushed red pepper, one tablespoon of finely chopped cilantro, and salt to taste.
Cooking Method
Ranveer Brar previously explained in his YouTube video that the main factors affecting paratha tearing are the moisture content of the potatoes and the consistency of the dough. He advised that by using the correct ratio and small tricks, a masterful result can be achieved at home. To begin, add a little salt and some besan to the flour to give the dough a crispy texture. Then add cumin and a little ghee, after which knead the dough, trying to keep it soft.
The potatoes must be grated, adding grated ginger, finely chopped green peppers, cilantro, salt, red pepper, cumin, amchur, and pomegranate powder. Ranveer Brar emphasized that the consistency of this filling must match the consistency of the dough so that it can be easily stuffed.
He also noted that if onions are added, the paratha should be formed immediately because onions release liquid, which spoils the filling. If you plan to store the parathas and filling for a long time, it is better to refrain from using onions. After this, form the flatbread into the desired shape, fill it with the potato mixture, and carefully seal the edges. The potato should be evenly distributed across the entire surface if its consistency is good. The finished parathas are baked over low heat.
