How to make a high-protein soup mix at home from three types of legumes, shelf life up to 6 months

In the modern fast pace of life, people strive for nutrition that is quick to prepare, tasty, and healthy. When feeling slightly hungry or wanting something hot in the evening, they often turn to ready-made soups or noodles, such as Maggi. However, if one can prepare such a legume-based soup mix at home that allows for soup preparation in just a few minutes, buying packaged products becomes unnecessary.

This high-protein soup mix can be easily made at home using three different types of legumes. Its feature is that after preparation, it can be stored in airtight containers for approximately 6 months, and when needed, a hot soup can be quickly prepared from it, eliminating long preparation time.

What is this soup mix?

This soup mix is made from mung beans (मूंग दाल), lentils (मसूर दाल), and tur dal (तुअर दाल). These legumes are first roasted, then mixed with various spices and ground into a fine powder. This finished powder is what is used to make the soup. After creating the mix, it should be stored in an airtight container, where it can last about six months.

What is needed to prepare the soup mix?

The first step in creating the soup mix is to thoroughly wash the mung, lentil, and tur dal, and then drain all the water. Next, the legumes need to be roasted over low heat in a pot, stirring constantly until all moisture evaporates and the color of the legumes begins to change slightly.

After the legumes are roasted, cumin seeds (जीरा), coriander (धनिया), whole black pepper (साबुत काली मिर्च), Kashmiri red chili (कश्मीरी लाल मिर्च), and a few curry leaves (करी पत्ते) are added. All ingredients are lightly roasted over low heat. Then salt and turmeric are added to taste and cooked for another 1-2 minutes. After this, the heat is turned off, and the mixture is completely cooled. The cooled material is ground in a blender until a fine powder is obtained.

Thus, the homemade soup mix is ready. It should be poured into a clean and airtight container. If needed, soup can be prepared from this mix in just a few minutes.

How to quickly prepare high-protein soup?

Since this soup mix is made from protein-rich legumes, it is considered high-protein. To prepare such a soup, the following steps must be taken:

  1. When you want soup, heat a little oil in a pot or pan. Sauté ginger and garlic, then add vegetables of your choice and lightly fry, adding a little salt.
  2. Then pour in water and add a little corn. Add about 2 tablespoons of the prepared soup mix. Cook everything together for 2-3 minutes.

The ready hot, tasty, and protein-rich soup will be ready. Thus, the homemade mix significantly simplifies the process compared to the preparation required for store-bought soups or Maggi.

Suji Aloo Samosa Recipe: Crispy and Spicy Snack Made from Semolina and Potato

As soon as you hear the word samosa, you want something spicy with tea. Usually, making samosas at home seems like a complicated process that requires kneading and rolling dough from flour. However, you can prepare an equally delicious snack without using wheat flour. Today we present a recipe for a snack made from semolina (suji) and potato, which resembles a samosa in appearance but turns out very crispy and aromatic. Its specialty lies in using semolina to make the dough, which is filled with a rich filling of spices, then coated in a light spiced batter, and deep-fried. This snack will be very popular among home lovers, especially when served with tea.

Suji Aloo Samosa Recipe:

To begin, you need to prepare the semolina dough. Pour 3 cups of water into a large pot, add 1 teaspoon of oil and salt, and then mix in 2 cups of fine semolina. Although fine semolina is better, regular semolina will also do. Then turn on the heat and stir the mixture constantly. After some time, the semolina will absorb the water and thicken, turning into a dough consistency. When the mixture is completely ready, turn off the heat, cover it with a lid, and lightly grease it with oil so that the dough becomes soft and easy to roll.

Next is preparing the potato filling. Heat oil in a small pan, reduce the heat to medium, and add hing, cumin, mustard, and whole coriander. After this, fry garlic cloves and green pepper. Then add grated ginger and curry leaves, turn off the gas, and mix with turmeric and red chili. Pour the finished spicy sauce onto 5 boiled potatoes in a large bowl, add salt to taste, and finely chopped herbs. Mash the potatoes thoroughly using a potato masher, ensuring that the garlic, green pepper, and spices are evenly distributed throughout the potatoes.

After this, gently knead the semolina mass with your hands until it becomes soft and stops sticking to your hands. Form small balls from it. Roll one ball on a lightly oiled surface, trying not to make it too thin, but leaving a moderate thickness. Place a generous portion of the potato filling in the center. It is important to leave a little space around the edges. Place another rolled piece of semolina on top and carefully press the edges with your fingers to seal it tightly. Cut the resulting pieces into four parts, thus forming shapes resembling samosas.

Now, prepare the special coating. Take wheat flour in a bowl, add chili flakes, chopped curry leaves, green dill, kalonji, white sesame seeds, and salt. Then gradually add water to form the batter. The consistency of this batter should be such that the finished semolina and potato pieces are well covered.

Heat oil in a pot. As soon as the oil is well heated, dip the pieces made from semolina and potato into the batter and immediately drop them into the hot oil. After placing them, reduce the heat to medium. Fry these pieces until they become golden and crispy. Your delicious Suji Aloo Samosa is ready. Serve it hot with tea, green or sweet and sour chutney. The crispy outer crust and spicy potato filling make the taste even richer.

Flights to popular tourist destinations may double due to UAE National Day holidays

Residents of the United Arab Emirates planning trips to popular tourist spots during the five-day UAE National Day holidays are strongly advised to book flights in advance, as demand and high oil prices could lead to an almost twofold increase in travel costs.

According to tourism industry leaders, informed travelers have already managed to find favorable offers and make bookings to take advantage of available hotel and flight prices, which have been rising over the last six months due to high oil prices.

Some UAE employees will receive a five-day leave from Wednesday, December 2, 2026, to Sunday, December 6, 2026, in celebration of the country's 55th National Day.

Rashida Zahid, Vice President of Operations at musafir.com, noted that the cost of flights to destinations popular for visiting friends and relatives (VFR) is likely to increase by 25–35 percent, while tickets to high-demand leisure destinations could potentially double.

She emphasized: 'Since residents can enjoy an extended five-day holiday, we expect a significant rise in travel demand during the UAE National Day holidays.' Rashida added that the scale of this increase will depend on the destination, airline capacity, and how early travelers make their bookings.

She stated that on these routes, prices could rise by another 12–25 percent during the National Day period, depending on availability and booking dates, and urged travelers to book early to avoid sharper price increases closer to the holidays.

Since the start of the war in the Middle East on February 28, 2026, aviation fuel prices have nearly doubled due to the closure of the Strait of Hormuz.

Rashida also reported that booking patterns have changed amid the overall regional situation: residents are now booking trips closer to departure dates, although long-haul flights and visa-requiring trips are still planned well in advance.

'The strongest signal is that demand is returning in the fourth quarter,' she said, adding that bookings are expected to grow steadily during school holidays, Diwali, National Day, as well as during Christmas and New Year.

Despite the regional background and rising oil prices, she does not forecast a drop in prices compared to last year.

'We expect that airfares during the UAE National Day holidays will remain around last year's levels or may increase, driven by higher fuel costs and persistent capacity constraints on certain routes,' stated a musafir official.

She also mentioned that the return of several European carriers to the region is a positive development, as increased flight availability can help stabilize prices. Nevertheless, she cautioned travelers against expecting last-minute discounts due to the anticipated surge in demand.

Mira Ketait, Head of Retail Sales and Leisure for the UAE at dnata Travel, stated that the UAE remains a market where many bookings are made at the last minute, with most trips being reserved three to eighteen days before departure.

Based on current bookings, the Maldives are the most popular international destination, followed by Thailand, Switzerland, and South Africa.

'Since National Day is expected to be a relatively short holiday, UAE residents prefer destinations that are easily accessible but offer a completely different experience,' she noted.

The Maldives remain a favorite due to the four-hour flight time, visa-free entry, and dry season weather in early December.

Thailand continues to attract visitors looking for diversity and good value for money, allowing tourists to combine beach relaxation, city tours, and wellness treatments in one trip, while Switzerland attracts those seeking winter holidays, offering a contrast to life in the UAE through its ski season and Christmas markets.

A representative from Emirates Holidays confirmed that island destinations are the most popular: the Maldives, Mauritius, and Seychelles together account for half of all Emirates Holidays bookings during the holidays, with an average stay of five nights. Half of all island trip bookings are made by couples.

Thailand also remains a strong favorite with an average stay of six nights, and Helsinki is emerging as an unexpected contender ahead of new Emirates flights launching on October 1.

Ketait added that interest is growing in new destinations such as New Zealand, Portugal, and Tunisia.

South Africa is showing the sharpest growth, increasing sales by 58 percent year-on-year, while domestic bookings within the UAE also rose by 23 percent.

An Emirates Holidays representative reported that half of all bookings for this period were made earlier in the summer, as customers sought to secure their preferred hotels and travel dates.

Families now account for 48 percent of bookings, higher than in previous years, as many combine public holidays with several days of annual leave to extend the trip, saving remaining leave for the holiday season. Couples make up 45 percent of bookings, and solo travel is also gaining popularity, the representative reported.

Mira Ketait also noted that hotel sales for departure dates during National Day have increased by 23 percent compared to the same period last year.

'Demand for the long-awaited UAE National Day holiday is very high among travelers from the UAE this year,' she concluded, pointing to the continued interest in international travel following a similar trend in the summer.
