If you are craving something sweet, there is no need to buy desserts from the store every time. If you have an air fryer, you can prepare a very delicate, creamy, and aromatic Bengali dessert. Although when mentioning Bengali sweets, people often think of Rasgulla or Mishti Doi, this article talks about Kesar Bhapa Doi.
This dessert, which is traditionally made from yogurt and prepared by steaming, has a simple preparation method presented in this article using an air fryer. This method is especially suitable for those who want to prepare something special and festive with minimal effort.
The specialty of Kesar Bhapa Doi is that it does not require long heat treatment or complex techniques. It is made from thick hung curd, condensed milk, fresh cream, and saffron, and melts in your mouth. The aroma of cardamom further enhances its flavor.
Ingredients
First, you need to prepare the hung curd. For this, 3 cups of yogurt must be placed in cheesecloth and hung for several hours to remove all excess liquid. After removing the liquid, about one and a half cups of thick hung curd will remain.
It is important to remember that the thicker the yogurt, the creamier and denser the consistency of the Bhapa Doi will be.
Preparation Method
Take 2 tablespoons of warm milk in a bowl and add 10-12 strands of saffron. Then gently crush the saffron and mix it thoroughly with the milk so that the color and aroma of the saffron are well released.
Place the prepared hung curd in a large bowl. Add the saffron milk, condensed milk, fresh cream, and cardamom powder to it, then whisk the mixture thoroughly until it is completely uniform, ensuring no lumps remain.
After that, transfer the mixture into an earthenware pot and cover it tightly with aluminum foil. Then, pour a little water onto the bottom rack of the air fryer, place the earthenware pot on it, and turn on the air fryer at 150 degrees Celsius for 10-12 minutes.
After taking it out of the air fryer, the dessert should not be eaten immediately but placed in the refrigerator for 2-3 hours. Cooling will make the consistency even denser, and the taste perfectly creamy.
Regardless of whether it is a celebration or just a desire to eat something sweet, this recipe will suit. The aroma of saffron, the creamy texture, and the light taste of cardamom make this dessert special. The best news is that you do not need to stand in the kitchen for hours to prepare it. If you have an air fryer, you can try this modified version of the Bengali dessert using simple ingredients and minimal time.
