This tiramisu recipe with custard tart combines the familiar taste of custard tart with elements of a classic dessert. Tiramisu Recipe with Custard Tart

For the custard base

You need 500 ml of whole milk, ½ cup of sugar, 1 beaten egg, 2 teaspoons of vanilla extract, 2 tablespoons of baking flour, 2 tablespoons of cornstarch, ¼ teaspoon of cinnamon, and a pinch of salt.

For the mascarpone cream

You require 500 g of mascarpone and chilled custard tart cream.

You will need 2 packs of Boudoir biscuits, 1 cup of milk for dipping, and cinnamon powder for dusting.

Method of preparation

First, mix the milk, sugar, and vanilla extract in a saucepan, heating them until warm. Beat the egg in a separate bowl. Mix the baking flour and cornstarch with a small amount of cold milk or water to obtain a smooth consistency.

Add the beaten egg to the warm milk, stirring constantly with a whisk. Then incorporate the flour and starch mixture, followed by the cinnamon and salt. Cook the mixture over medium heat, stirring continuously, until the custard base thickens and becomes smooth. Transfer the cooked custard base to a bowl, cover with plastic wrap, and cool completely.

Next, mix the mascarpone in a large bowl, stirring until uniform. In another bowl, beat the cooled custard tart cream until smooth and add it to the mascarpone, continuing to beat until combined. Pour the cold milk into a shallow dish. Quickly dip each Boudoir biscuit in the milk. Place the first layer of soaked biscuits in the serving dish, topping it with a generous layer of mascarpone cream with custard tart. Repeat the process with the second layer of biscuits and finish with the remaining cream. The dessert must be chilled for at least four hours or overnight. Before serving, generously dust with cinnamon powder.

How long to soak the Boudoir biscuits?

The biscuits should be soaked briefly. They need enough milk to soften, but they cannot be left in it. Overly soaked biscuits can make the finished dessert watery and difficult to serve neatly. It is recommended to dip each biscuit immediately before placing it in the dessert. The chilling time will allow the biscuits to soften further by absorbing moisture from the creamy filling.

Collecting the cheese: When the cheese and water are completely separated, collect the cheese by hand or using a sieve and squeeze out the excess liquid.

Giving the cheese elasticity: Dissolve 1 teaspoon of salt in the remaining hot water. Then, dip the formed cheese balls into this hot water for 2 minutes, then remove them and squeeze out the water while pressing. This process should be repeated 3-4 times so that the cheese acquires the same elasticity as the store-bought kind.

Forming the structure: After this, immerse the cheese balls in cold water with ice for 2-3 minutes to maintain their shape. Then, take them out and squeeze the cheese thoroughly.

Storage: Finish the process by wrapping the cheese in plastic wrap or an airtight container and placing it in the refrigerator for 2-3 hours. Your clean and tasty homemade mozzarella cheese is ready. It can be grated and used in pizza or sandwiches.
